Falafels
Recipe By: Maya Jagger, in Maya What’s for Lunch, page 33
Ingredients:
28 ounces garbanzo beans canned
1/2 teaspoon sea salt
1/2 cup carrot grated
1/4 cup onion minced
1/4 cup tahini
1/2 teaspoon turmeric
1/2 teaspoon cumin
Directions:
Mash together all ingredients (food processor works well). Drop by spoonful on a greased cookie sheet. Bake at 350 F for 20 minutes.
Notes:
Notes: Serve in pita halves with layered with chopped cucumber and tomato, hot sauce, and tahini sauce.
Tahini Sauce

Ingredients:
1/2 cup tahini
1/2 teaspoon garlic minced
1/2 teaspoon sea salt
1/4 cup lemon juice
1/3 cup water
Directions:
Combine tahini, garlic and sea salt. Stir in lemon juice. Stir in water. Consistency should be a bit runny and creamy.
Notes: Serve this as part of falafels.
