Orange Oatmeal Muffins

Ingredients:
1 cup whole wheat flour
1 cup rolled oats, Cereals quick oats
1/4 cup brown sugar
2 teaspoon baking powder
2 tablespoons flax
1/3 cup chocolate chips
1/3 cup raisins
1 teaspoon vanilla extract
1 egg
2 tablespoons canola oil
1/2 cup milk, fluid, 1%
1 Medium organic orange, chopped fine
Directions:
Preheat oven to 400F. In a medium bowl, combine flour, oats, sugar, baking powder, flax, chocolate chips and raisins.
In another bowl mix together chopped orange, brown sugar, egg and oil. Add wet ingredients to dry ingredients and stir until just combined. Scoop batter into greased mini-muffin cups and bake about 25 minutes.
NOTE: I chop the orange in the food processor, very fine, before adding it to the wet ingredients.
