Back to Beans

I’ve had a lot of medical appointments for the last three or four weeks, all routine. The feedback from the appointments, that is thus far available, has been good news. There are still a few test results that haven’t come back, not really expecting any bad news, but of course, you never know. The highlight appointment was with the endocrinologist, and they said of my medication, “this medication is saving your life.” This information is from a reliable and accountable source, it was music to my ears. Fate can intervene with these things, it is always good to remember that there are no certainties, but I am confident that what can be done for me is being done.

During the time when I knew I would spending entire days travelling in the car, and long hours sitting in waiting rooms, I decided not to eat beans, for obvious reasons. Now I have a stretch of weeks where I have no appointments, so it is back to beans in my daily diet.

Accordingly, Attila brought up a frozen package of beans that he had cooked in the Instant Pot last week, which I used to make refried beans. Cooled, they went into ½ cup containers to be frozen for my lunches, Molletes.

We seem to be going through a period of discovery at the moment, new recipes that we love. Our recipes have to be low in sodium, sugar, saturated fats, cholesterol, and calories… and preservatives. Our recipes need to be high in fibre, and include lots of vegetables. So it isn’t often I find recipes that I think will work for us, as not many of the recipes, in books or on the internet, taste very good without generous amounts of salt, sugar, and/or fat. Our two new recipes are Cod Curry, and Molletes.

The weather continues to be cloudy and wet, and a little bit warmer than it has been. There is still snow in the next week’s forecast, and two nights that will fall below freezing, but every day will bring the thermometer reading up above the freezing mark.

Today Attila is installing three new light fixtures in the new pantry, and a light switch. All of the shelving units that will go into the pantry have been moved into place. When Attila finishes the last few infrastructural projects for the pantry, the work of organizing what goes where begins.

I really look forward to being able to find things!

When I first saw the title, I thought, oh, you’ve finished up all the fancy foods and now it’s back to rice and beans. (I like beans, actually. Black eyed peas with jasmine rice and a little gluten free tamari sauce is quite good.) I’ve never thought about restricting beans for THAT reason. Maybe if I were more ‘reactive’, :). I agree, make the best of things!

Timing. We’re also spending entire days in the car, traveling to treatments for DH. Unfortunately, some days that’s combined with girl-dog Skye having to have her bandages changes in the mornings for post-surgery at the vet’s. It’s been a very busy 2+ weeks with that combination. Fortunately, Skye is healing well and hopefully her bandages will come off in the next week or so.

Heads up: DH’s daughter started working for H&R Block this year. She let us know that if you travel more than 80 kph for medical reasons that you can take it off on taxes next year and that you also get a meal daily stipend of $23 per person for you and a single companion, if you have one traveling with.

Lol! Just realized I said kph when I meant distance for mileage. Lack of practice with conversions.

The appointments for pup and DH haven’t been easy, especially since DH’s appointments are changeable. It’s made for some anxiety, that’s for sure. And we’ve had a few days of icing, but never actually had a problem – thank goodness!

I’m the tax preparer in the family. DH keeps all the receipts – which is great because I’d probably lose them! And I do the forms. Our taxes are pretty simple, so it doesn’t take that long.
