Usually the items I can are consumed over the course of several years. Not so applesauce. When the most recent one litre jar was brought up from the pantry, there was only one full jar left on the shelf downstairs. Clearly, since it is about six months until apple harvest season returns, I did not can enough applesauce.
This week Ontario apples were on sale at the local grocery store. Not a great price, but reasonable enough to make it worthwhile to can more applesauce. Sixteen pounds of Gala apples were purchased, and today they were prepared, milled, and canned. The yield was six on-litre jars of applesauce. That will last a few months at least, and perhaps even long enough to take us into the first harvests of beets or peas or some other vegetable with which to begin my breakfast.
We are making plans to visit my Mom on her birthday which is coming up in the next few months, so looking forward to that!

Hi Maggie. It’s been awhile since I commented but have now got caught up on your posts. Good to hear things are going well with you in these disturbing times. But never mind all that. Spring weather is here every other day it seems. I have my veggie seeds all started under lights in the basement and my peonies and spring bulbs are poking up. I love your new canning shelves. What a great idea to have roll out ones for the large food buckets. Canning is ongoing here too. I just did some mushroom stock and next up is beef stock. I did extra apple sauce last fall as my 8 year old granddaughter, who lives down the road, gobbled it all up quickly the year before. She’s hardly eaten any this year! It’s funny how every year is different with gardens and canning.
Joan, I love Gala apples too! They make a delicious applesauce, quite thick, so I have to dilute it a bit with filtered water and fresh lemon juice to get the right consistency for canning.
Sandy, lovely to hear from you! Spring is struggling to appear this year, but it does keep beating its way to the forefront. We are to get a freezing rain storm this weekend, I hope that is the last of the severe weather!
What a great idea to start the seeds under lights, a lovely activity for early spring, when the weather hasn’t quite caught up with our hopes and plans. The mushroom stock sounds lovely, I’ve not tried that, will have to investigate! It is interesting how every year in the garden is different, and every year with preserved food is different. Luckily the food we preserve lasts well beyond a year, and is eventually consumed. I still spend time every year exploring how to create a meal from a vintage food from the pantry, items always get forgotten, but not lost forever, lol.
