One Hundred Pounds of Tomatoes: Day Two

We were off to a slow start this morning with our canning. The day was lovely, and sitting on the back porch was just way too enticing!

The project began in earnest at around 10:00 a.m., two double batches of Tomato Salsa. This salsa is for Attila, as I prefer Salsa Verde. He decided that chopped tomato would be preferable to milled tomato.

We began by washing the tomatoes, removing the stem ends, blanching, peeling, and then chopping. 24 cups of chopped tomatoes took a long time to process. Attila chopped the onions and green pepper.

I am sitting here with my feet up, it is 5:05 p.m. and we just finished a bite to eat. The second double batch of salsa is on the range, and as soon as it has simmered for a little while, I will be jarring it, then canning it. All of the finished jars should be lined up on the counter to cool before bed time, I hope. That makes 28 jars of Tomato Salsa for the pantry, just enough to last a year!

Attila has decided to do all the prep work tonight for another batch of Chili Sauce, which I will cook and can first thing tomorrow morning. Then we move on to canning Pizza Sauce.

Our goal is to finish canning all of the tomatoes by Monday. I get my second Shingrix shot then, and anticipate that I will be feeling ill for a few days with that, so no canning planned during the recovery time.
