Rambling

Another very cold sunny day today.

We ventured out despite the wind chill of -25C. One of the pleasant things about this kind of cold is that the snow crunches underfoot, and the footing is very firm. We crunched along the road, only to find that the sidewalks have not yet been plowed after Sunday’s storm. So we crunched back home again. It is so good to get out in the fresh air.

Today I baked more Chocolate Muffins for my breakfasts. Also on the list of food to make today is a Lentil Salad. It calls for Du Puy lentils, but what we have is split red lentils, which are not ideal for salad. Well that is what we have, so that is what will go into the salad. Homemade pizza dough is started now, later I’ll be rolling it out on a pizza pan, and Attila will add the toppings and bake it for dinner.

I am enjoying my intermittent fasting, which in my case means I eat three meals between the hours of 9 a.m. and 5 p.m., and do not snack. I drink two litres of water a day, and drink one cup of Kombucha with a little added cranberry juice.

I eat the same breakfast every day; 1/2 cup of applesauce, two chocolate muffins, a mug of chicory/coffee with 1% milk and no sugar, and peeled apple slices. Additions to this breakfast are made as opportunity allows. In the winter this means banana, or blueberries when they are on sale. In the gardening season it means a few snow peas, a bit of sliced zucchini or cucumber, a few sprigs of raw broccoli, a small peeled sliced beet, it varies. For lunch I love toasted tomato sandwiches, or tuna salad sandwiches, or an egg salad sandwich. Another favourite lunch is homemade soups. Dinner always starts with a green salad with homemade dressing. Dinner itself is usually something Attila suggests, from our collection of healthy tasty recipes, which. tonight, will be homemade pizza.

I find life a lot more relaxing now that I have my routine breakfast and lunch menus, and not thinking about, or feeling guilty about snacking. My allergy makes finding safe food very challenging, add to that the sodium, sugar, and cholesterol restrictions, it is even more challenging, then add to that the need to keep my weight down, it becomes even more challenging. Another challenge is finding appropriate foods at a price we can afford. So it is a relief to just not think about what I am going to eat!

Our retired life revolves around healthy food. Attila eats about four times as much as I do, and since we cook from scratch, it keeps us very busy making sure there are plenty of meals available for him to enjoy. I love the foods I eat, and spend a lot of time making sure that those foods are ready to grab out of the refrigerator or freezer.

There are a lot of loud noises coming out of the basement. The new walls are finished, and work on the canning shelves has begun. It is a great winter project, and the new level of organization will be very welcome this summer when the harvest starts coming in, and the preservation season begins.

My horrendous hair cut, which happened last October, still has mostly bad days. Thank goodness it is winter hat season, a hat covers a multitude of sins. At least I’ve had two or three recent good hair days, so hopefully they will increase. My hair is just starting to behave in ways that are familiar to me. I don’t know what they did to my hair, but I’ve never had a haircut quite like it. I hope never to have a haircut quite like it again.

In our household, we do two meals, between 7am and 3pm, usually. Occasionally, there might be a small evening snack, but I try to keep that rare. It gives the digestive system a rest. Most breakfasts are two eggs, three skinny rice cakes and sometimes a Kind bar or almonds. (I must avoid gluten to avoid agony.)

I don’t usually weigh myself but today I stepped on the scale. I’ve lost 40 lbs from trying to come back from this blocked colon. Turns out that’s how much I thought I’d lost, based on how my clothes were fitting. (Hanging like sacks on me.)

I’ve gotten my near-continuous snacking back to 3 meals once again, but my meals aren’t as large as they used to be. If I do eat too much my insides start to rebel. I’m not sure what kind of effect my current intake will have on my weight but once we get into spring and I can get back to walking outdoors, that will make a difference, I’m sure.

Right now for breakfast I’m having an English muffin, a slice of cheese, and sometimes a slice of deli meat. I just switched to a whole wheat English muffin today, to bring in a little more fiber. I’m still not having as much veggies and fruits as I should, but tomorrow I hope to have a salad.

I’m hoping we can go grocery shopping tomorrow. Our highway into town has been closed for the last 3 days, so everyone in the neighborhood has been stuck – except for those that happened to venture out when the police weren’t at the crossing where the closed sign is. The entrance to our subdivision is only about 300 ft from where the sign is but the police were forcing people to turn around when they were there. I had to cancel an eye doctor appointment after hearing someone had been threatened with a $500 ticket!

Lol! BTW, my Sheltie boy, Loki, seems to regard me as warm-blooded furniture. He’s quite certain that when he wants to sit in my lap that I’m supposed to oblige. He pulls himself up by hooking his neck backwards around my neck as I lean down and then pushing himself up with his feet.
